Why? Because even the most perfectly floated wall has microscopic "waves." If you put a Satin or Semi-gloss paint on a Level 5 wall, the light will catch every slight undulation, making the wall look wavy rather than smooth.

If you have Level 5 walls but washability is a non-negotiable must, Erick recommends that the highest sheen we should put is Matte.
